Asian Chicken Stir Fry

The Asian Chicken Stir Fry makes a great weekday dinner when you want something comforting and fuss free. It is loaded with tender pieces of fried chicken coated with a delicious sauce that goes really well with a hot bowl of rice. You can also use any vegetables you like in this stir fry!

Ingredients

Chicken:

  • 100g Chicken Thighs or Breast
  • Cornstarch
  • Vegetable Oil


Vegetables:

  • 1 medium carrot, peeled and sliced
  • 1 medium red pepper, sliced
  • 1 small head of red onion, sliced
  • 1 clove of garlic, chopped
  • 1 tbsp of Olive oil
  • 1 tsp of salt


Sauce:

  • 2 tbsp of Curtice Brothers Ketchup
  • 1 tbsp of soy sauce
  • ½ tbsp of honey


Instructions:

  1. Mix the sauce ingredients and set aside
  2. Deep fry the chicken in vegetable oil, for about 6-7 minutes or until golden brown. Transfer to paper towel to absorb excess oil
  3. In a deep pan, add olive oil and start by frying the onions and garlic
  4. After 2 minutes, add in the carrots and peppers, season with salt
  5. Cook for 3 minutes until vegetables are soft and add in the cooked chicken with the stir fry sauce
  6. Stir fry for 2 minutes and serve over cooked rice
