Chickpea and Spinach Curry
Whether as a side dish or as a main course, this rich curry is a perfect match for a steaming bowl of rice.
Ingredients
- 1 tbsp of vegetable oil
- 1 clove of garlic, crushed
- ½ small head of red onion, sliced
- 10 cherry tomatoes, halved
- 2 tsp of curry powder
- ½ tsp of salt
- ½ tsp of black pepper
- 2 tbsp of Curtice Brothers Organic Ketchup
- 50 ml water
- 1 tsp of honey
- 1 tsp of chili flakes
- 100g of chickpeas from a can
- A handful of fresh spinach
Instructions:
- In a hot pan, add vegetable oil, stir fry garlic and onion for 2 minutes
- Add in tomatoes, ketchup, water, curry powder, honey, chili flakes salt and black pepper
- Lower the heat for 2 minutes and add in the chickpeas
- Stir regularly, and after another 2 minutes - add in the spinach
- Cook until the spinach has wilted and serve
