Chili Sin Carne

Orginated from Spain, the Chili Sin Carne is great for those who are looking for a meat-free alternative of the popular Chili Con Carne. Not only it's a super easy dish to whip up during a long weekday, but it packs a whole load of flavour from the sweetness of the vegetables and crunch from the corn. Instead of using stock and chili powder, we are introducing the Curtice Brothers organic Chilli Ketchup here. And boy, are we in for a delicious treat! The Chilli Ketchup holds a surprisingly balanced flavour while still maintaining the heat and freshness. We simply couldn't get enough of this and you should definitely try it too!

Chili Sin Carne

Ingredients

□  2 tbsp vegetable oil
□  Half a yellow onion, chopped
□  1 clove of garlic, chopped
□  1 carrot, peeled and chopped
□  1 red bell pepper, chopped
□  1 green bell pepper, chopped
□  50g corn
□  100g red kidney beans
□  A pinch of oregano
□  A pinch of salt and pepper
□  1 jar of Curtice Brothers Organic Chilli Ketchup
□  400g chopped tomatoes
□  1 tbsp maple syrup

Instructions

1. Preheat oven at 200 degrees
2. Mix the sauce ingredients together and set aside
3. Place the prepared vegetables in a baking tray and pour in the sauce
4. Mix nicely and toss evenly
5. Pour in the water
6. Roast the vegetables for about 30 minutes
7. Enjoy with a sprinkle of hazelnuts
