Crispy Chicken

On days that you are craving for crispy fried chicken, why not try your hands on a healthier version? This recipe doesn't use oil, and yet the coat of our organic mayonnaise act as a nice surprise when you bite into it. Here we serve it with mashed potatoes, but it really does go with anything - creamy linguine, salad or even as a sandwich!

Crispy Chicken


□ 1 chicken breast
□ 1 piccolo of Curtice Brothers Organic Mayonnaise
□ 50 gr of breadcrumbs
□ 30 gr of parmesan cheese
□ ½ tsp of sea salt
□ 1 tsp of dried oregano

Mashed Potatoes:
□ 200 gr of potatoes, boiled, chopped
□ 20 gr of butter
□ A pinch of salt
□ A pinch of black pepper
□ A pinch of garlic powder
□ 50 ml milk
□ 2 tsp of mayonnaise


1. Preheat oven to 180 degrees
2. Mix breadcrumbs, parmesan, sea salt and dried oregano in a plate and set aside
3. Rub mayonnaise evenly over chicken breast, then coat it nicely with the plate of mixed ingredients
4. Baked in the oven for 35 to 40 minutes
5. Meanwhile, prepare the mashed potates by adding all of the ingredients to a bowl and mash until smooth and fluffy
6. Serve and enjoy!
