Hearty Stew
Stew is always a comfort food that comes to mind as the months get colder. Tender meat, fall vegetables and a soup that you just want to mop clean with warm bread. Nobody says no to stew!
Ingredients
- 2 tbsp of vegetable oil
- 1 clove of garlic, diced
- ¼ red onion, diced
- 250g of pork, chopped
- 1 carrot, peeled and chopped
- 150g of potatoes, chopped
- 100g of mushrooms, sliced
- Fresh rosemary, 1 sprig
- 1 tsp of salt
- 1 tsp of black pepper
- 100 ml of red wine
- 50g of frozen peas
- 60g of Curtice Brothers Organic Ketchup
- 400g of chopped tomatoes, from a can
- 1L of vegetable stock
- 1 tbsp of flour, dissolved in 100 ml of water
Instructions:
- In a soup pot, start by frying the onions and garlic for about 1 minute
- Add in the pork and brown it on all sides
- Stir in the carrots and potatoes for 2 minutes
- Add the mushrooms and season with salt, black pepper and rosemary
- Cook for about 5 minutes, stirring regularly and then add in the wine for another 2 – 3 minutes
- Add in ketchup and stir nicely for a minute, followed by tinned tomatoes and stock
- Lower the heat and cover
- Simmer for about an hour
- Now add in the dissolved flour in water and let it simmer for another 10 minutes, this will thicken the stew
