Pulled Pork Sliders
Sliders are a great fun food to have. They are easy to pop, and you can eat it anywhere! If you have a BBQ? Pulled pork sliders. Have friends over? Pulled pork sliders. Watching a game? Pulled pork sliders. If it isn’t a recipe that you keep in your pocket, it should be now.
Ingredients
Pulled Pork:
- A medium sized pork shank
- 1 tsp of salt
- ½ tsp of black pepper
- 2 tbsp of vegetable oil
Coleslaw:
- 50g of cabbage, shredded
- 50g of carrot, shredded
- 1 tbsp of Curtice Brothers Organic Mayonnaise
- 1 tbsp of chopped parsley
- 1 tsp of lemon juice
Slider Buns:
- Slider buns
- Butter
Instructions:
- Preheat oven to 180 degrees
- Season the shank with salt, pepper and vegetable oil
- Add in a baking tray with 50 ml of water, and cover with aluminium foil
- Roast in the oven for about 2 hours covered and uncover it for another 30 minutes - so it gets a nice crisp outside
- Using 2 forks, pull the pork apart
- Meanwhile, mix the carrots, cabbage, parsley, lemon juice and mayonnaise
- Cut the buns in half lengthwise and toast them on a pan
- Spread some butter on the buns and top with coleslaw and pulled pork
