Red Capsicum Pesto
Red Capsicum Pesto made from scratch is so simple, and yet so fresh. It is a flavour that you can hardly find in stores. This pesto can be served with warm toasted bread as an appetiser, or with chips as a snack. You can even use it as a sauce for a wrap. It is a highly versatile sauce and a recipe to keep in your pocket!

Pesto:
- 2 roasted peppers, peeled and deseeded
- 1 tbsp of olive oil
- Some fresh basil leaves
- 2 tbsp of Curtice Brothers Ketchup
- ½ tsp of salt
- ½ tsp of black pepper
- 10g of pistachios
Instructions:
- Add all the ingredients into a blender and blitz until desired consistency
- Serve with warm toasted bread
