Roasted Pepper and Tomato Soup
This is a thick, creamy tomato soup that’s soothing, nourishing and full of flavour. You can have this as an starter, or serve with warm bread for a light meal after a long day.
Ingredients (For 2 – 3)
- 1 clove of garlic, chopped
- 1 small head of red onion, chopped
- 1 tin of chopped tomatoes, 400g
- 1 red bell pepper, roasted, peeled and deseeded
- 500ml of vegetable stock
- 2 tsp of salt
- 1 tsp of black pepper
- 1 tsp of dried oregano
- 1 tbsp of sugar
- 3 tbsp of Curtice Brothers Organic Ketchup
- 50g of butter
Serve with:
- Fresh basil
- Parmesan
- Black pepper
Instructions:
- In a soup pot, add all of the ingredients except butter, and start cooking on a medium heat
- Let the soup simmer for about 30 minutes
- Transfer to a blender and blend until smooth
- Add butter and stir
- Serve with Parmesan, basil and black pepper
