Salmon Fajita with Mango and Curry Ketchup Sauce

This is a recipe for you if you are craving for something fancy and yet doesn't want to slave in the kitchen. The mango has a really nice balance with our organic curry ketchup and this sauce goes hand in hand with salmon. Not to be missed!

Salmon Fajita with Mango and Curry Ketchup Sauce

Ingredients

Sauce:
□ 5 tsp of Curtice Brothers Curry Ketchup
□ 50g of mango, chopped 1 clove of garlic
□ A small bunch of fresh parsley
□ 1 tbsp of olive oil
□ 1 tbsp of honey

Fajitas:
□ 1 tsbp of oil
□ 1 salmon fillet
□ Season with salt and black pepper
□ Water cress
□ Tortilla wraps
□ Red onions, thinly sliced 

Instructions

1. Add sauce ingredients to a blender and blitz until smooth
2. In a hot pan, add oil and start by cooking salmon, season with salt and pepper
3. Cook for 3 minutes on each side and take it off the heat
4. Pull it apart using a fork
5. Toast the tortilla wraps for a minute on each side and top with watercress, salmon, pour over some of the sauce and finish it with some red onions
6. Enjoy
