Shashuka
These baked eggs are easy to make, yet taste as though you were travelling to its origin. It’s absolutely a brunch favourite.
Ingredients
- 1 tbsp of vegetable oil
- 1 clove of garlic
- ¼ small red onion, chopped
- 1 small carrot, chopped
- 1 small red pepper, chopped
- 1 tbsp of Curtice Brothers Organic Ketchup
- 200g of chopped tomatoes from a tin
- 1 tsp of honey
- ½ tsp of salt
- ½ tsp of black pepper
- ½ tsp of dried oregano
- 2 eggs
Serve with:
- Spring onions
Instructions:
- In a hot pan, add vegetable oil, and start by frying the garlic, onions, peppers and carrots for 5 minutes
- Add in ketchup and let it cook for a minute
- Add in chopped tomatoes and season with honey, salt, black pepper and oregano
- Simmer for about 10 minutes on a low heat
- Transfer into a baking pan, and break the eggs on top
- Bake in the oven, set to 200 degrees, for about 15 minutes
- Serve with spring onions
